Ingredients
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
2 large carrots, sliced
2 celery stalks, sliced
1 teaspoon turmeric powder
1 teaspoon ground ginger

6 cups chicken broth
2 cups shredded cooked chicken (rotisserie chicken works well)
1 cup baby spinach or kale
Juice of 1 lemon
Salt, to taste
Fresh parsley, chopped (for garnish)
Instructions
Step 1: Sauté Vegetables
Heat olive oil in a large pot over medium heat.
Add the onion and sauté until softened, about 3–4 minutes.
Stir in garlic, carrots, and celery. Cook for 5 minutes until the vegetables start to soften.
Step 2: Add Spices
Sprinkle turmeric powder, ground ginger, and black pepper over the vegetables. Stir to coat evenly and let cook for 1–2 minutes to release the aromas.
Step 3: Simmer the Broth
Pour in the chicken broth and bring the soup to a boil.
