Ingredients
For the Soup:
1 lb beef stew meat or ground beef
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, peeled and sliced
2 apples, peeled, cored, and chopped (preferably tart apples like Granny Smith)
4 cups beef broth (or vegetable broth for a lighter option)
1 teaspoon sea salt (plus more to taste)
½ teaspoon black pepper
1 teaspoon dried thyme
1 bay leaf
1 tablespoon olive oil
1 teaspoon ground ginger (optional, for a warm spice note)
Optional Garnishes:
Fresh parsley, chopped
Crusty bread or rolls, for serving
Instructions

Heat the olive oil in a large pot over medium-high heat.
Add the beef stew meat or ground beef and cook until browned, breaking apart the beef as it cooks. If using stew meat, brown on all sides.
Once browned, remove the beef from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook for 2-3 minutes until the onion softens and becomes fragrant.

Stir in the sliced carrots, chopped apples, beef broth, salt, black pepper, thyme, and bay leaf.
If you want a touch of warmth, add the ground ginger. Stir to combine.

Return the beef to the pot and bring the soup to a boil.
Once boiling, reduce the heat to low and simmer for 30-40 minutes, or until the carrots are tender and the flavors have melded together.

Taste the soup and adjust the seasoning with more salt, pepper, or ginger if needed.

Ladle the soup into bowls and garnish with fresh parsley if desired. Serve with crusty bread or rolls on the side for a complete meal.
