Ingredients
1 medium head of cabbage, chopped
1 large onion, chopped
2 large carrots, sliced
2 bell peppers, chopped (any color)
3 celery stalks, chopped
1 lb lean beef stew meat, cut into bite-sized pieces
4 cups beef broth
1 can (14.5 oz) diced tomatoes
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon ground turmeric (optional for anti-inflammatory benefits)
1 teaspoon sea salt
½ teaspoon black pepper
1 tablespoon olive oil
2 cups water
Fresh lemon juice (optional, for added brightness)
Instructions
Brown the Beef:
In a large pot, heat the olive oil over medium heat.
Add the beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
Sauté the Vegetables:
In the same pot, add the chopped onion, carrots, bell peppers, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
Add the garlic and cook for an additional minute until fragrant.
Simmer the Soup:
Return the browned beef to the pot.
Add the chopped cabbage, beef broth, diced tomatoes (with juice), oregano, basil, turmeric (if using), salt, and pepper.
Pour in the water and bring the soup to a boil.
Once boiling, reduce the heat and let it simmer for 30-45 minutes until the beef is tender and the vegetables are fully cooked.
Adjust and Serve:
Taste the soup and adjust seasoning with more salt, pepper, or a squeeze of fresh lemon juice if desired.
Ladle the soup into bowls and serve hot.
