Ingredients
1 lb beef sirloin, thinly sliced
6 slices deli ham, chopped
1 cup Swiss cheese, grated
4 cups beef broth
1 cup heavy cream
2 tbsp butter
1 small onion, finely chopped
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried thyme (optional)
1 tbsp fresh parsley, chopped (for garnish)
Instructions
Step 1: Sauté the Beef
In a large pot, melt the butter over medium heat. Add the beef sirloin and cook until browned on both sides, about 5-7 minutes. Remove the beef from the pot and set it aside.
Step 2: Cook the Aromatics
In the same pot, add the onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
Step 3: Make the Soup Base
Pour in the beef broth and bring it to a simmer. Stir in the salt, pepper, and dried thyme (if using).
Return the cooked beef to the pot, and let it simmer for 10-15 minutes to meld the flavors.
