Ingredients
For the Beef Broth:
2 lbs beef shank, beef brisket, or bone-in beef short ribs
10 cups water
1 large onion, quartered
3 garlic cloves, smashed
1-inch piece fresh ginger, sliced
2 tablespoons soy sauce
1 tablespoon fish sauce (optional for depth of flavor)
1 teaspoon whole black peppercorns
1 bay leaf
1 teaspoon sea salt (plus more to taste)
For the Soup:
8 oz rice noodles or wheat noodles (cooked according to package instructions)
2 large carrots, sliced into rounds
1 large daikon radish (or white radish), peeled and cut into chunks
1 cup baby bok choy (or spinach)
2 tablespoons soy sauce
½ teaspoon black pepper
Optional Toppings:
Sliced green onions
Fresh cilantro leaves
Sliced red chili (for spice)
Lime wedges, for serving
Bean sprouts
Boiled egg, halved
Instructions
Make the Beef Broth:
In a large pot, combine the beef (shank, brisket, or short ribs), water, onion, garlic, ginger, soy sauce, fish sauce (if using), black peppercorns, bay leaf, and sea salt.
Bring to a boil, then reduce heat to low. Skim off any foam that rises to the surface.
Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the broth is rich in flavor.
Strain the Broth (Optional for Clarity):
Remove the beef from the pot and strain the broth to remove the onion, garlic, ginger, bay leaf, and peppercorns.
Return the strained broth and beef to the pot. Shred or slice the beef into bite-sized pieces.
Cook the Vegetables:
Add the carrots, daikon radish, and soy sauce to the pot. Simmer for 20-25 minutes, or until the carrots and radish are tender.
Add the baby bok choy or spinach and cook for 2-3 more minutes until wilted.
Prepare the Noodles:
Cook the noodles according to the package instructions. Drain and set aside.
Assemble the Soup:
Divide the cooked noodles among serving bowls.
Ladle the hot beef broth into each bowl, making sure to include pieces of beef, carrots, radish, and bok choy.
Serve:
Garnish with fresh cilantro, green onions, red chili slices, and bean sprouts.
Add a squeeze of fresh lime juice to brighten the flavor. Serve with a boiled egg if desired.
