Ingredients
1 lb ground beef (or turkey for a lighter option)
1 medium onion, diced
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
1 (15 oz) can mixed vegetables, drained
1 (15 oz) can kidney beans (or any beans of your choice), drained and rinsed
4 cups beef or vegetable broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper, to taste
1 cup small pasta (such as elbow macaroni or shells)
1 tablespoon Worcestershire sauce (optional, for added flavor)
Instructions
Brown the Meat:
In a large pot, cook the ground beef (or turkey) over medium heat, breaking it apart with a spoon. Once browned and cooked through, drain any excess fat.
Sauté the Vegetables:
Add the diced onion to the pot and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
Add the Soup Ingredients:
Stir in the diced tomatoes, mixed vegetables, kidney beans, and broth. Season with dried oregano, basil, thyme, salt, and pepper. Bring the mixture to a simmer over medium-high heat.
Cook the Pasta:
Once the soup is simmering, add the pasta and cook according to the package instructions, usually around 8-10 minutes. Stir occasionally to ensure the pasta doesn’t stick.
Finish and Serve:
Once the pasta is cooked and the soup has thickened slightly, stir in the Worcestershire sauce (if using). Taste and adjust seasoning as needed.
Serve:
