This Chicken & Pearl Couscous Soup is the epitome of comfort food. Packed with tender chicken, hearty pearl couscous, and vegetables in a savory broth, this soup is satisfying and perfect for any time you need something warm and comforting.
Ingredients
1 tablespoon olive oil 

1 lb boneless, skinless chicken breasts, diced 

1 medium onion, chopped 

2 cloves garlic, minced 

2 large carrots, peeled and diced 

2 celery stalks, chopped 

1 cup pearl couscous 

6 cups chicken broth 

1 teaspoon dried thyme 

1 teaspoon dried oregano 

1 teaspoon sea salt 

½ teaspoon black pepper 

1 bay leaf 

1 tablespoon lemon juice 

Fresh parsley, chopped (for garnish) 

Instructions

In a large pot, heat the olive oil over medium-high heat.
Add the diced chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
Remove the chicken from the pot and set aside. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for 4-5 minutes until the vegetables begin to soften.

Stir in the pearl couscous and let it toast for 2-3 minutes, stirring occasionally to avoid burning.

Add the chicken broth, dried thyme, oregano, salt, pepper, and bay leaf. Stir to combine.
Bring the soup to a boil, then reduce the heat to low and let it simmer for 10-15 minutes until the couscous is tender and the vegetables are fully cooked.

Return the cooked chicken to the pot and stir in the lemon juice for a burst of freshness. Simmer for an additional 5 minutes to combine the flavors.

Remove the bay leaf, taste the soup, and adjust the seasoning with more salt or pepper if needed.
Ladle the soup into bowls and garnish with fresh parsley.
