Ingredients

For the Soup:
2 tablespoons unsalted butter 🧈

1 cup dill pickle juice 🥒
1 cup chopped dill pickles 🥒

1/2 cup sour cream 🥛
1/2 cup heavy cream 🥛

Extra chopped pickles 🥒

Crusty bread or garlic bread 🍞

Instructions

1️⃣ Sauté the Aromatics:
In a large pot, melt the butter over medium heat.
Add the diced onion and sauté for 3-4 minutes until softened.
Add the minced garlic and cook for another minute until fragrant.
2️⃣ Cook the Potatoes:
Add the potatoes, chicken or vegetable broth, black pepper, and salt to the pot.
Bring to a boil, then reduce heat to a simmer. Cook for 10-15 minutes or until the potatoes are tender when pierced with a fork.
3️⃣ Prepare the Thickener:
In a small bowl, whisk together the sour cream, heavy cream, and flour to form a smooth slurry.
Add 1/4 cup of the hot broth from the pot to the sour cream mixture to temper it. This prevents curdling when added to the soup.
4️⃣ Add the Pickle Goodness:
Pour the sour cream mixture into the pot while stirring constantly.
Add the dill pickle juice, chopped pickles, and dried (or fresh) dill. Stir well to combine.
