Ingredients
1 tablespoon olive oil 

1 medium onion, chopped 

3 cloves garlic, minced 

1 (14.5 oz) can diced tomatoes 

1 cup sun-dried tomatoes, chopped (oil-packed or dry) 

4 cups chicken broth 

1 cup heavy cream 

1 package (9 oz) cheese tortellini 

2 cups fresh spinach, roughly chopped 

1 teaspoon dried basil 

1 teaspoon dried oregano 

Salt and pepper, to taste
1/4 cup Parmesan cheese, grated 

Fresh parsley or basil for garnish (optional) 

Instructions
Sauté the Aromatics:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 5 minutes, until softened. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
Add Tomatoes and Broth:
Stir in the diced tomatoes and sun-dried tomatoes. Add the chicken broth and bring the mixture to a simmer. Let it cook for about 5 minutes to allow the flavors to combine.
Cook the Tortellini:
Stir in the tortellini and cook according to package instructions (usually 3-5 minutes) until the tortellini is tender and heated through.
Add the Cream and Spinach:
Once the tortellini is cooked, pour in the heavy cream and stir to combine. Add the chopped spinach, basil, oregano, salt, and pepper. Let the soup simmer for another 2-3 minutes until the spinach is wilted and the soup is creamy.
Finish and Serve:
Stir in the grated Parmesan cheese until melted and incorporated into the soup. Taste and adjust seasoning as needed with salt and pepper.
Garnish and Serve:
Ladle the soup into bowls and garnish with additional Parmesan cheese and fresh parsley or basil if desired.
