Ingredients
For the Soup:
1 tablespoon olive oil 

1 medium onion, diced 

2 celery stalks, chopped 

2 medium potatoes, peeled and diced 

2 cups diced ham 

2 cups corn kernels (fresh, frozen, or canned) 

3 cups chicken or vegetable broth 

1 cup heavy cream 

1 cup milk 

1 teaspoon garlic powder 

1/2 teaspoon dried thyme 

Salt and black pepper to taste 



1/2 cup shredded cheddar cheese (optional) 

Fresh parsley, for garnish 

Instructions

Heat olive oil in a large pot over medium heat.
Add the diced onion and chopped celery, sautéing for 4-5 minutes until softened and fragrant.
Add the diced potatoes and cook for another 2-3 minutes, stirring occasionally.

Add the chicken or vegetable broth, diced ham, corn, garlic powder, thyme, salt, and pepper to the pot.
Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the potatoes are tender.

Stir in the heavy cream and milk. Let the soup simmer for an additional 5 minutes, allowing the flavors to blend together.

If desired, stir in the shredded cheddar cheese and allow it to melt into the soup for extra creaminess and flavor.

Ladle the soup into bowls, garnish with fresh parsley, and serve with warm bread or crackers for dipping.
