Ingredients

For the Soup:
1 lb ground beef 🥩
1 medium onion, diced 🧅
3 garlic cloves, minced 🧄
2 large carrots, sliced 🥕
2 celery stalks, chopped 🌿
6 cups beef broth 🍲
1 can (14.5 oz) diced tomatoes (with juice) 🍅
1 teaspoon dried basil 🌿
1 teaspoon dried oregano 🌿
1/2 teaspoon smoked paprika (optional) 🌶️
1/2 teaspoon salt (or to taste) 🧂
1/4 teaspoon black pepper (or to taste) 🌶️
2 cups egg noodles (or your choice of pasta) 🍜
1 tablespoon olive oil 🫒
2 tablespoons fresh parsley (for garnish) 🌿

Instructions

1️⃣ Cook the Ground Beef:
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks (about 5-7 minutes). Drain any excess fat.
2️⃣ Sauté the Vegetables:
Add the onion, garlic, carrots, and celery to the pot with the beef. Sauté for 4-5 minutes until the vegetables begin to soften.
3️⃣ Simmer the Soup:
Pour in the beef broth, diced tomatoes (with their juice), basil, oregano, smoked paprika (optional), salt, and black pepper. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, allowing the flavors to develop.
4️⃣ Cook the Noodles:
Add the egg noodles to the pot and simmer for another 8-10 minutes, or until the noodles are tender. If the soup gets too thick, you can add a bit more broth or water.
5️⃣ Taste and Adjust:
Taste the soup and adjust the salt and pepper as needed.
6️⃣ Serve:
Ladle the Hamburger Noodle Soup into bowls and garnish with fresh parsley. Serve hot with crusty bread or a side of crackers.
