Ingredients
For the Soup:
1 lb ground beef 

1 medium onion, diced 

3 garlic cloves, minced 

2 large carrots, sliced 

2 celery stalks, chopped 

6 cups beef broth 

1 can (14.5 oz) diced tomatoes (with juice) 

1 teaspoon dried basil 

1 teaspoon dried oregano 

1/2 teaspoon smoked paprika (optional) 

1/2 teaspoon salt (or to taste) 

1/4 teaspoon black pepper (or to taste) 

2 cups egg noodles (or your choice of pasta) 

1 tablespoon olive oil 

2 tablespoons fresh parsley (for garnish) 

Instructions

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks (about 5-7 minutes). Drain any excess fat.

Add the onion, garlic, carrots, and celery to the pot with the beef. Sauté for 4-5 minutes until the vegetables begin to soften.

Pour in the beef broth, diced tomatoes (with their juice), basil, oregano, smoked paprika (optional), salt, and black pepper. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, allowing the flavors to develop.

Add the egg noodles to the pot and simmer for another 8-10 minutes, or until the noodles are tender. If the soup gets too thick, you can add a bit more broth or water.

Taste the soup and adjust the salt and pepper as needed.

Ladle the Hamburger Noodle Soup into bowls and garnish with fresh parsley. Serve hot with crusty bread or a side of crackers.
