This Cabbage Soup is simple, healthy, and delicious! It’s loaded with vegetables and full of flavor from the Lipton Onion Soup Mix. Perfect for a light, satisfying meal.
Ingredients
1 large cabbage, chopped
2 small onions, diced
2 cans stewed tomatoes
1 bag Lipton Onion Soup Mix
1 large celery stalk, chopped very small
6 cups vegetable broth (or chicken broth)
1/2 teaspoon salt (to taste)
1/2 teaspoon black pepper (to taste)
1 tablespoon olive oil (for sautéing)
Instructions
Step 1: Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the diced onions and chopped celery. Sauté for about 5-6 minutes until softened.
Step 2: Add the Tomatoes and Broth
Stir in the stewed tomatoes (including their juice) and vegetable broth. Bring the mixture to a simmer.
Step 3: Add the Cabbage and Soup Mix
Add the chopped cabbage to the pot and sprinkle in the Lipton Onion Soup Mix. Stir to combine.
Step 4: Simmer
Cover the pot and let the soup simmer for about 30-40 minutes, or until the cabbage is tender. Stir occasionally.
Step 5: Season and Serve
Taste the soup and adjust the salt and pepper to your liking.
