Ingredients
1 lb ground beef or Italian sausage (or a mix of both)
1 medium onion, diced
3 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
1 (6 oz) can tomato paste
1 (15 oz) can tomato sauce
4 cups chicken broth (or beef broth)
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
8 oz uncooked pasta (broken lasagna noodles work great, or use any short pasta like rotini or penne)
1 cup ricotta cheese (optional, for extra creaminess)
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Instructions
Step 1: Cook the Ground Meat
In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat.
Add the ground beef or sausage and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat, if necessary.
Step 2: Sauté the Vegetables
Add the diced onion and garlic to the pot with the meat. Cook until softened, about 4-5 minutes.
Step 3: Add Tomatoes and Broth
Stir in the diced tomatoes, tomato paste, tomato sauce, and chicken broth.
Season with basil, oregano, salt, and pepper. Bring the mixture to a simmer.
Step 4: Add the Pasta
Once the soup is simmering, add the uncooked pasta. Let the soup cook for about 10-12 minutes, or until the pasta is tender.
Step 5: Add the Cheese
Stir in the ricotta (if using), mozzarella, and Parmesan cheese. Let the soup simmer for an additional 2-3 minutes until the cheese is melted and the soup is creamy.
