Ingredients
For the Soup Base:
1 lb boneless, skinless chicken breasts
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 ½ cups heavy cream
2 cups egg noodles
1 teaspoon Italian seasoning
½ teaspoon smoked paprika
½ teaspoon red pepper flakes (optional)
1 teaspoon sea salt
½ teaspoon black pepper
For the “Marry Me” Sauce:
2 tablespoons butter
¼ cup sun-dried tomatoes, chopped
½ cup chicken broth
1 tablespoon Dijon mustard
1 teaspoon lemon juice
½ cup grated Parmesan cheese
Optional Garnishes:
Fresh parsley, chopped

Instructions
Cook the Chicken:
Heat olive oil in a large pot over medium heat.
Add the chicken breasts and cook for 6-8 minutes per side until golden brown and cooked through.
Remove the chicken from the pot and set aside to rest. Once cooled, shred the chicken into bite-sized pieces.
Prepare the Soup Base:
In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
Pour in the chicken broth and bring the mixture to a simmer.
Stir in the heavy cream, Italian seasoning, smoked paprika, red pepper flakes (if using), salt, and black pepper.
Add the egg noodles and cook according to package instructions, about 8-10 minutes, until the noodles are tender.

While the soup is simmering, melt the butter in a small saucepan over medium heat.
Add the chopped sun-dried tomatoes and cook for 2-3 minutes until fragrant.
Stir in the chicken broth, Dijon mustard, and lemon juice, and let the sauce simmer for 2-3 minutes to thicken.
Stir in the grated Parmesan cheese until smooth and combined.
Combine the Chicken and Soup:
Add the shredded chicken back into the soup and stir in the “Marry Me” sauce.
Simmer the soup for 5-7 minutes, allowing the flavors to meld and the soup to thicken.
Serve:
Ladle the soup into bowls and garnish with fresh parsley and extra grated Parmesan cheese.
