Ingredients
For the Soup Base:
1 lb ground beef

1 tablespoon sesame oil

1 medium onion, chopped

3 cloves garlic, minced

1-inch piece of ginger, grated or minced

4 cups beef broth

3 tablespoons soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon brown sugar (or to taste)

1 teaspoon chili garlic sauce (optional, for heat)

2 cups water

8 oz noodles (egg noodles, ramen, or your choice)

1 cup baby spinach or bok choy, chopped

2 green onions, chopped for garnish

Optional Toppings:
Sesame seeds

Fresh cilantro

Sliced jalapeños

Hard-boiled egg

Instructions

In a large pot, heat the sesame oil over medium heat.
Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove excess fat if necessary.

Add the chopped onion, garlic, and grated ginger to the pot. Cook for 2-3 minutes, stirring occasionally, until fragrant and the onion is softened.

Pour in the beef broth, soy sauce, hoisin sauce, rice vinegar, brown sugar, and chili garlic sauce (if using). Stir to combine and bring the soup to a simmer.
Add 2 cups of water and continue to simmer for 5-10 minutes to allow the flavors to meld.

Add the noodles to the soup and cook according to the package instructions (usually 4-6 minutes for ramen or egg noodles).

Stir in the chopped baby spinach or bok choy and cook for another 1-2 minutes until wilted.

Ladle the soup into bowls and garnish with chopped green onions, sesame seeds, fresh cilantro, sliced jalapeños, and a hard-boiled egg if desired.
