Potato Kielbasa Soup

Ingredients

1 lb kielbasa, sliced into bite-sized pieces
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 medium potatoes, peeled and diced
4 cups chicken broth
1 cup heavy cream
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and pepper, to taste
1 cup shredded cheddar cheese (optional)
Fresh parsley, chopped (for garnish)

Instructions

1. Brown the Kielbasa:
In a large pot, heat the olive oil over medium heat.
Add the sliced kielbasa and cook until lightly browned, about 5-6 minutes.
Remove the kielbasa from the pot and set aside.
2. Sauté the Vegetables:
In the same pot, add the chopped onion and cook until softened, about 3-4 minutes.
Add the minced garlic and cook for another minute until fragrant.
3. Add the Potatoes and Broth:
Stir in the diced potatoes, chicken broth, smoked paprika, and dried thyme.
Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the potatoes are tender.
4. Finish the Soup:
Once the potatoes are tender, return the cooked kielbasa to the pot.
Stir in the heavy cream and let it simmer for another 5 minutes.
Season with salt and pepper to taste.
5. Serve:
Ladle the soup into bowls.
If desired, sprinkle with shredded cheddar cheese and fresh parsley for garnish.
