Ingredients
For the Seafood Soup Base:
2 tbsp olive oil
1 medium onion, finely diced
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes
1 can (6 oz) tomato paste
4 cups seafood or chicken broth
1/2 cup dry white wine (optional, for depth of flavor)
1 tsp dried basil
1 tsp dried oregano
1/2 tsp crushed red pepper flakes (optional, for heat)
Salt and black pepper, to taste
For the Seafood:
1/2 lb shrimp, peeled and deveined
1/2 lb lump crab meat
1/2 lb clams, cleaned (in shell or canned)
2 tbsp fresh parsley, chopped
For the Linguine:
8 oz linguine (cooked according to package instructions)
For the Toast Bites:
4 slices of crusty bread (baguette or sourdough)
2 tbsp olive oil or melted butter
1 garlic clove, halved
Instructions
Prepare the Soup Base:
Heat olive oil in a large pot over medium heat. Add onion and sauté until softened, about 5 minutes.
Stir in garlic and cook for 1 minute, until fragrant.
Add diced tomatoes, tomato paste, broth, and wine (if using). Stir to combine.
Season with basil, oregano, crushed red pepper, salt, and black pepper. Simmer for 15–20 minutes to develop flavors.
Cook the Seafood:
Add clams to the simmering soup and cook for 5–7 minutes, until they open. Discard any unopened clams.
Gently stir in shrimp and crab meat. Cook for 3–5 minutes, or until the shrimp are pink and opaque.
Combine with Linguine:
Add the cooked linguine to the soup, stirring to coat in the tomato broth. Simmer for 2 minutes to blend the flavors.
Prepare the Toast Bites:
Preheat the oven to 375°F (190°C). Brush both sides of the bread slices with olive oil or butter and arrange on a baking sheet.
Toast for 8–10 minutes, flipping halfway through, until golden and crisp. Rub the warm bread with the garlic clove for extra flavor.
