Ingredients

For the Soup Base:
1 lb shrimp, peeled and deveined 🍤
1 tablespoon olive oil 🫒
1 medium onion, chopped 🧅
3 cloves garlic, minced 🧄
2 cups chicken broth 🍲
1 ½ cups heavy cream 🥛
1 can (14.5 oz) diced tomatoes 🍅
2 teaspoons Italian seasoning 🌿
1 teaspoon sea salt 🧂
½ teaspoon black pepper 🌶️
8 oz lasagna noodles, broken into pieces 🍝
1 tablespoon fresh parsley, chopped 🌿
For the White Sauce:
3 tablespoons butter 🧈
3 tablespoons all-purpose flour 🌾
2 cups whole milk 🥛
1 cup shredded mozzarella cheese 🧀
½ cup grated Parmesan cheese 🧀
Optional Garnishes:
Extra shredded mozzarella 🧀
Fresh basil or parsley 🌿

Instructions

1️⃣ Cook the Shrimp:
Heat the olive oil in a large pot over medium heat.
Add the shrimp and cook for 2-3 minutes, until pink and opaque. Remove the shrimp from the pot and set aside.
2️⃣ Make the Soup Base:
In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
Stir in the chicken broth, heavy cream, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a simmer.
Add the broken lasagna noodles to the pot and cook according to package instructions, about 10 minutes, or until al dente.
3️⃣ Prepare the White Sauce:
In a separate saucepan, melt the butter over medium heat.
Whisk in the flour and cook for 1-2 minutes to make a roux, ensuring there are no lumps.
Slowly whisk in the milk and continue to cook, whisking constantly, until the sauce thickens (about 3-4 minutes).
Stir in the shredded mozzarella and grated Parmesan, and cook until the cheese is melted and the sauce is smooth.
4️⃣ Combine the White Sauce and Soup:
Pour the prepared white sauce into the soup base, stirring to combine.
Add the cooked shrimp back into the pot and stir in the fresh parsley. Simmer for another 2-3 minutes to heat everything through.
5️⃣ Serve:
Ladle the soup into bowls and top with extra mozzarella cheese, fresh basil or parsley, and a sprinkle of Parmesan if desired.
