Description
This Stuffed Bell Pepper Soup is a comforting and hearty dish, packed with all the flavors of a classic stuffed bell pepper, but in a delicious soup form!
Ingredients
2 pounds ground beef
2 bell peppers, diced
1 onion, chopped
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
1 (8 oz) can tomato sauce
4 cups beef broth
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked rice
1/2 cup shredded cheese (optional, for topping)
Fresh parsley or basil, for garnish
Instructions
Step 1: Brown the Ground Beef
In a large pot, brown the ground beef over medium heat until fully cooked, breaking it up into small pieces with a spoon. Drain any excess fat.
Step 2: Sauté the Vegetables
Add the diced bell peppers, onion, and garlic to the pot with the ground beef. Sauté for about 5 minutes, until the vegetables are softened.
Step 3: Add Tomatoes and Broth
Stir in the diced tomatoes and tomato sauce. Pour in the beef broth and bring the mixture to a boil.
Add the Italian seasoning, salt, and pepper. Reduce the heat to a simmer and let the soup cook for 15-20 minutes, allowing the flavors to blend together.
Step 4: Add Rice
Stir in the cooked rice and let it cook for an additional 5 minutes until heated through.
Step 5: Serve and Garnish
Ladle the soup into bowls and top with shredded cheese (if using) and fresh parsley or basil for a burst of color and flavor.
Tips:
For a spicier version, add a pinch of red pepper flakes or use a spicy sausage instead of ground beef.
To make this recipe gluten-free, make sure the tomato sauce and broth do not contain gluten.
If you prefer a vegetarian version, you can substitute the ground beef with lentils or beans.
This Stuffed Bell Pepper Soup is a filling and flavorful dish that’s perfect for colder days. Enjoy!
