Ingredients
For the Soup:
1 tablespoon olive oil

1 tablespoon unsalted butter

1 small onion, diced

2 cloves garlic, minced

1 stalk celery, chopped

1 carrot, diced

1/2 lb shrimp, peeled and deveined

1/2 lb crab meat (or a mix of other seafood)

2 cups seafood or chicken broth

1 cup heavy cream

1 cup milk

1/2 cup white wine (optional)

1 teaspoon Old Bay seasoning

1/2 teaspoon garlic powder

Salt and black pepper to taste

1/2 teaspoon dried thyme

1 tablespoon fresh parsley, chopped

For the Bread Bowls:
4 large round sourdough bread bowls

For the Topping:
4 strips of bacon, cooked and crumbled

1/2 cup grated Parmesan cheese

Fresh parsley for garnish

Instructions

Heat olive oil and butter in a large pot over medium heat.
Add the diced onion, garlic, celery, and carrot. Cook for 4-5 minutes until softened and fragrant.

Add the shrimp and crab meat (or other seafood) to the pot. Sauté for 2-3 minutes until the shrimp turns pink.
Pour in the seafood broth, white wine (if using), heavy cream, and milk. Stir to combine.

Add Old Bay seasoning, garlic powder, thyme, salt, and pepper. Bring the soup to a gentle simmer.
Let it simmer for 10-12 minutes, allowing the flavors to meld and the seafood to fully cook.

Cut the top off each bread bowl and hollow out the inside, leaving a thick border around the edge.
Toast the bread bowls in the oven at 375°F for about 10-12 minutes, or until golden and crispy.

Once the soup is done, remove it from heat and stir in fresh parsley.
Ladle the soup into the prepared bread bowls.

Top each soup-filled bread bowl with crumbled bacon and a generous sprinkle of grated Parmesan cheese.
Garnish with extra fresh parsley if desired.
Serve immediately and enjoy the indulgent flavors of this hearty seafood soup!
